Holy Guacamole 

Guacamole is a big favourite in our family, no sooner than it has been made it has been demolished. It’s super quick to make. You can serve it as a snack with toasted pita crisps or a more substantial meal on top of grilled cheese nachos.

Ingredients

1 avocado, peeled and halved

1 large garlic glove, peeled and crushed

Salt and pepper

1 tablespoon lemon juice

1 tablespoon sour cream, cream cheese or creme fraiche

1/2 cup diced tomato

1 finely sliced spring onion

Method

Mix all the ingredients together except for the tomato. If the avocado is soft you should be able to mix with a fork, you may need a hand held mixer if the avocado is hard.

You leave the tomato out as otherwise your guacamole will lose its vibrant green colour. Check for seasoning, then gently fold the diced tomato through and serve straight away.  If you are not serving straight away, cover the dip firmly with cling film to prevent it from going brown.
