These are SO good – lovely with soup or as a snack and they are really quick to make.
Turn on the oven to 200 degrees.
Ingredients
1 1/2 cups of plain flour
3 teaspoons of baking powder
1 teaspoon paprika
1 spring onion (scallion)
Pinch of salt
1/2 cup milk
3 tablespoons of strong / tasty cheddar cheese (grated)
50g butter
Method
Sift the flour, baking powder, paprika and salt into a large mixing bowl. Dice the butter and drop into the flour, mixing it through with your fingertips until it resembles breadcrumbs. Finely slice the spring onion, mix through the flour, along with most of the grated cheese. Now add the milk and mix quickly until you have a soft dough. Drop spoonfuls into a greased mini muffin tray (you can make larger ones – just increase the cooking time). Sprinkle a little bit of the remaining cheese on top of each.
Bake for 8 – 10 minutes (for the mini muffins) or until golden.
These would be soo delicious with some tomato soup! I love them!

Yes they are really good with soup – served warm with a little bit of butter!
