Quick Quesadillas 

I’m not sure you can call this cooking – it’s more assembly. But I figure if Nigella can create a recipe out of avocado on toast then I can too! 

Quesadillas are a super quick snack and a good way of using up flour tortillas. The great thing about them is you can do a whole variety of fillings so they are great party food for carnivores and vegetarians. I often spread left over chilli con carne, topped with fresh tomato and cheese as a quick lunch – delicious with a blob of sour cream. 

Ingredients

  • 8 flour tortillas (to serve 4 people) 
  • Around 100g grated cheddar cheese 
  • Chopped scallion or red onion
  • Choice of filling (finely diced tomato, chilli, peppers, finely chopped or ground ham, bacon, chorizo or chicken
  • Tiny little bit of oil for frying

It’s important not to overload the tortilla otherwise you won’t be able to turn it over the pan. You can either put the tortilla straight into the frying pan, sprinkle with cheese and your chosen ingredients, a little more cheese and then place another tortilla on top. Cook gently for a minute or two then turn it over (carefully). 

Or if you want a cheats version, you can pre make them and transfer to the pan…if you cut the tortilla in half and fold it over you are less likely to lose the filling. 

Serve with sour cream, salsa or / guacamole
