This is a tasty alternative if you are looking for a reduced carb breakfast or brunch or if you are simply trying to avoid bread. You can make the Kumara toast ahead of time if you are too busy of a morning to be cooking for too long.
Serves 2:
- 4 fresh, organic eggs
- 1 small kumara (sweet potato)
- Large handful baby spinach leaves
- Drizzle of coconut or olive oil
- Salt & Pepper to season.
Pre heat the oven to 180° and place some baking paper on a tray. Scrub clean (no need to peel) and slice the kumara into 1cm rounds. Drizzle a little oil on the babking paper and lay the kumara slices flat, sprinkle with salt and pepper until soft (usually 20 – 30 minutes).
When the kumara toast is ready, place on a warmed plate and cover with the baby spinach leaves.
Top with two perfectly poached eggs and season with black pepper.
